“Alright we’re going to get ready and then we’ll be coming over to you.” Said my mother and hung up the phone. OK, spontaneous visit from my mother in about an hour. We had to come up with something quick that goes well with coffee. How fortunate that our yogurt Gugelhupf – a quick cake can be made very fast and is also very tasty.

You are probably familiar with situations like this. There are days when things just have to go fast, no matter what you bake or cook. There is just no time left to prepare more. Then this could be a really good recipe for you. The yogurt Gugelhupf – a quick cake tastes great as it is. We like that it tastes so fresh and moist. Another advantage is that you can easily vary the basic recipe.

You can refine the yogurt Gugelhupf as you like, for example, with chocolate shavings in the dough and then glaze it with chocolate. If you also stir two tablespoons of cocoa powder into the dough, you get a darker dough and more chocolate flavor. Or how about some almonds or hazelnuts to make the cake a bit crunchy? Want something fresh to go with it? Then a cream cheese frosting with lime is also very tasty. We have combined the yogurt Gugelhupf with our vanilla lime cream into a tasty cream cake (see picture below).

The transformation into a cream cake was not difficult at all. You divide the Gugelhupf horizontally as centrally as possible. This works well with a thread or with a knife. Now lift the upper half carefully and put it aside. The two cake halves should be completely cooled before you spread them with the cream. Otherwise the cream will liquefy. Spread the cream generously on the bottom half of the Gugelhupf. Leave some of the cream for decorating the outside. Now place the top half on top of the cream and coat the outside of the cake. We decorated the whole thing with lime slices and rose petals.

Equipment

  • 1 Baking mold e.g. Gugelhupf
  • 1 Mixing bowl
  • 1 Hand mixer

Ingredients
  

  • 2 Eggs
  • 280 g Flour
  • 200 g Sugar
  • 90 g Cooking oil e.g. rapeseed oil, sunflower oil
  • 420 g Natural yogurt
  • 16,5 g Baking powder
  • 8 g Vanilla sugar
  • 1-2 teaspoon Lime juice or lime zest
  • 1 tablespoon Powdered sugar for decoration

Instructions
 

  • Alle Zutaten in eine Rührschüssel geben.
  • Mix with a hand mixer until smooth and homogeneous.
  • Preheat the oven ( top/bottom heat 180°, convection oven 160°)
  • Grease baking pan with a little oil/butter
  • Bake the cake for about 45min
  • When the cake is cooled down, dust with powdered sugar as desired

Notes

  • Baking time can vary, depending on your oven.
  • Make a toothpick test after 30 minutes. (Poke a wooden toothpick into the cake. If dough sticks to the toothpick, the cake is not yet done.)
  • The cake can be easily varied. Throw a few hazelnuts and almonds in the dough. Or how about some chocolate shavings and cocoa?
